About the Author
LISA BARRANGOU, PhD, is an experienced food scientist and culinary professional. After becoming a mother, she founded The Green Baby Chef, a homemade baby food company offering personal chef services for infants, as well as private cooking instruction and baby food-making workshops. She holds a BS in nutrition, food, and agriculture from Cornell University, and an MS and PhD in food science from North Carolina State University.

I really enjoyed reading, “The Amazing Make Ahead Baby Food Book.” I wish that I had this book when I started my journey of motherhood with my two loving children Mandivamba and Maliah. I really enjoyed the different healthy food options for your baby, and some of the food options for the later years too. I am excited to learn how to use some of the recipes, and to incorporate more vegetables in my children’s diet. The book had an amazing front cover, and beautiful graphics, easy to follow recipes, and easy to follow cooking and health tips throughout the book. This book is perfect for busy parents discovering new ways of preparing healthy foods for their children. Dr. Lisa Barrangou’s beautiful pictures inside of the book, time efficient recipes, and great advice, make it possible to have a fantastic time in your own home kitchen.
My favorite recipe is the Chocolate Macaroon Birthday Cupcakes. Birthdays are a time to celebrate and indulge, and this recipe does not hold back on the indulgence factor. I love that these cupcakes store well in the freezer. You can cook them and store them for later, without eating them all in one sitting at the table. Instead of regular eggs the recipe calls for using “flax eggs,” because Dr. Barrangou prefers the springier texture that results as well as the lack of the “eggy” flavor. One “flax egg,” is made by simply mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water. You can substitute this omega 3 rich mixture for regular eggs in almost any baked good, in a one-to-one ratio. The recipe makes 12 cupcakes.
